Multi-grain Extraordinaire

I’m still working my way through Peter Reinhart’s book, The Bread Baker’s Apprentice. A lot of people said this was the best bread ever, but I think I prefer the Light Wheat bread. I’m not really into bread that has chunks of stuff like oats and rice and whatever else in it. It had good flavor, though. Maybe I’ll just make it without the chunky stuff next time.
